" Storage and Handling "
You can store your Fresh Turkey in the refrigerator safely upon receipt for up to 5 days. If you will not be cooking your Turkey in that time frame, immediately place in freezer to arrest aging. The turkey will be good for 6 months in the freezer, be aware the quality of the meat will start to degrade after 6 months time. Hinck's Turkeys have no preservatives or additives, so please adhere to the time windows.
Thermometer
We encourage you to calibrate your thermometer before you start cooking to ensure the best outcome.
" Cooking "
Remove turkey from package, remove giblets and neck from cavity, rinse turkey inside and out and place directly onto roasting pan. Maintain at least half an inch of water, choice of broth in the bottom of the pan, to assure turkey does not dry excessively during cooking. Its ok if the turkey is just touching the drippings on the bottom but, its best to keep it dry so as to not cool or impede the cooking process. Make sure you have a good quality instant read thermometer and that it is properly calibrated. Preheat the oven to 325 F, and roast approximately 20 minutes per pound. Around the 2 hour mark check temperature. Bring center of breast meat to 155 degrees F (we will include illustration on position of thermometer). Options for keeping turkey moist would be to cover it with aluminum foil at times during the roasting. This will affect skin crispiness as well. Simply put, its a matter of timing that dictates the outcome. Depending on whether you cover in the beginning, the middle, the end or any combination of such. There is no right or wrong way, so enjoy the journey and trust your thermometer, not the clock. Once it is done cooking remove pan from oven, and remove foil if used, allow turkey to rest for 20 minutes before carving.
Enjoy
